The OWNERS

George is the co-owner and manager of Gaijin Izakaya. He worked in the hospitality and financial services industries, but decided to follow his passion for great food and beverages by opening The Coffee Shack in Zurich. After Coffee Shack, George embarked on this new and exciting journey by partnering up with Dan, opening Zürich’s first Yakitori concept.
Dan Shu is the Chef/Owner of Gaijin Izakaya. He is one of the ‘San Pellegrino Top 10 Chefs under 30’ in the USA and has worked in Michelin-starred restaurants like Daniel in NYC and Alinea in Chicago. He arrived in Zurich in 2017 where he brought his love for soulful cooking by introducing new ideas of American BBQ, burgers and fried chicken to Switzerland’s restaurants.

The Chef

Dan Shu is one of the ‘San Pellegrino Top 10 Chefs Under 30’ in the USA and has worked in Michelin-starred restaurants like Daniel in NYC and Alinea in Chicago.

After arriving in Zurich in 2017, he found his love for soulful cooking by bringing new ideas of American BBQ, burgers, and fried chicken to Switzerland through three exciting restaurants: Brisket, The Bite, and Yardbird.

In 2018, Dan & Freddy teamed up with George to operate NightMarkt, the first Japanese Yakitori concept in Zurich. The new cuisine was met with positive reviews, and we are now proud to introduce Chef Dan’s version of a Japanese Izakaya: Gaijin.
